KUBA WINKOWSKI COOKS IN A BARN

‘’…preserving ancient techniques in modern cooking…’’

Craft Guilds National Chef of the Year 2019 and renowned for his approach to game, fish, local Cotswolds and foraged ingredients, Chef Kuba Winkowski has created the ultimate intimate dining experience for lovers of food cooked over fire and smoke.

The first event at the newly-built Kubarn will be a Wagyu beef fine dining dinner on Friday 29th November, and for those who can’t grab a seat for this date, Kuba will be taking bookings and creating new menus for parties of four or five for dinner on Friday and Saturday, or other days on request.

The Wagyu menu, with meat supplied by Freedown Food, is £100 for five beefy courses plus canapes, a glass of  Gusbourne English Sparkling wine on arrival, tea and coffee.

Dishes include flank tartare with caviar, beef marrow focaccia with cultured butter, tri-tip bresaola with rocket and raspberry vinegar, ribeye BMS 5, Rosol, noodles and egg yolk.  Even the dessert features wagyu – apple and wagyu fat tart Tatin

KUBARN ‘THE SHED’ is a magical log cabin, designed by Kuba for comfortable dining year-round, with seating for just four or five people at a time, which has been built in Kuba’s garden at his home in Bourton on the Water in the Cotswolds.

IN HIS TIME WORKING

THE COTSWOLDS

Kuba has fallen in love with the area, and made it home for himself, his wife Magda and their son Jan. FARMERS & PRODUCERS FROM THE COTSWOLDS

LONG AND VERY STRONG RELATIONSHIPS

Over the years Kuba has established a very strong relationships with farmers and producers from the Cotswolds. Kuba produces award-winning charcuterie, cultured butter, smoked fish, bread and many more all from local products. Along the way, Kuba developed an interest in wood fired and charcoal cooking, as a very basic and old method of processing food.

KUBARN IS A CONCEPT

THE BEST FOOD EXPERIENCE IN THE COTSWOLDS

KUBARN is a concept which brings everything above in one place. The idea is to create a hub for the best food in the Cotswolds and adding Kuba’s passion, skill, experience and knowledge to offer a very special, tasty and unique experience. Kuba’s vision is to preserve ancient techniques in modern cooking, to come back to basics, to make things how they used to be, like real bread and butter!
